Identification & Biology: color light gray or brown; large adults with elongated caudal-fin rays; reddish brown spots on sides that tend to be grouped into lines; some yellow around corners of mouth. Related to the gag and other slender-bodied groupers, the scamp are identified by their pronounced anal and soft dorsal ray extensions, a more concave profile of the head, and by color. Scamp has a tan to grayish-brown body covered with sharply defined, well-separated dark spots, which are approximately an eighth of an inch in diameter.

Scamp can be aggressive predators, capturing crabs, shrimp, and fishes and swallowing them whole. The Scamp inhabits continental shelf waters from the Campeche Banks, in the Gulf of Mexico, to Florida and northward along the East Coast to North Carolina.

These areas are characterized by profuse growths of soft corals and sponges populated by red grouper, white grunt, red porgy and numerous species of small, tropical reef fish. It is the most versatile in its class due to a high moisture and oil content, and denseness of flake.

Special Note: Tail, dorsal, pectoral fins elongated to a point There are limited species available for sushi applications since many are known to carry parasites; as a result, chefs just avoid using them.

When served raw, the flesh is exceptionally tender and smooth, almost like Yellowtail Snapper. Additionally, from my experience, Scamps are not known to carry signs of parasites.

I find the slight sweetness and sourness of the dressing enhances the flavor even more. This included fish in multiple size ranges and pulled from different depths out of the Gulf of Mexico.

It’s really strange because Scamps inhabit the same areas as other groupers, but somehow they avoid getting infected. Perhaps they’ve evolved at a faster pace than other groupers and have developed better immune system against worms.

The two most popular commercially harvested groupers in the southeast are Gags and Reds, and both are notorious for having worms. Over the years, I don’t think I’ve ever cleaned a Red that wasn’t infected.

Anisakiasis is infamous as being the main culprit for illness related to eating raw fish. This is typical condition of a Red Grouper ’s cavity with animals (Round worms). They’re also less likely to carry worms and have similar texture and consistency as Scamps.

Red Hind (aka Strawberry) Grouper are also less prone to worms. Trolling, Jigging, and bait fishing (live or dead) are all productive methods for catching Grouper.

Hot grouper and snapper action awaits off Florida’s central Gulf coast. Tile fish and grouper have no problem snagging themselves on a circle hook and I would say it definitely helps keep the fish on when cranking them up from the deep.

Biology grouper grow slowly and can reach up to 50 inches in length and weigh up to 50 pounds. Red grouper are protogynous hermaphrodites, meaning they all begin life as a female and eventually some may transform into males.

Allocates an annual catch limit between commercial (76 percent) and recreational (24 percent) fishers Restricts certain gear types to reduce by catch Sets minimum size restrictions to protect immature red grouper Establishes year round and seasonal area closures for both commercial and recreational fishers to protect spawning stock and essential fish habitat The If program allocates shares of the total commercial catch limit amongst individual fishers.

Under the program, each fisher owns a share of the quota and can choose to fish it at anytime during the open season. The Reef Fish FMP has been a success in allowing red grouper populations to bounce back from overfishing that had occurred on and off in the Gulf since the 1970s.

They are fairly long-lived and come together to spawn in large numbers, characteristics that make them vulnerable to fishing pressure. The Gulf of Mexico population in the was declared overfished in 2000 and then was rebuilt to target levels in 2007, according to the U.S. National Marine Fisheries Service.

The South Atlantic stock is no longer overfished, but a 2010 assessment showed it hasn’t been fully rebuilt. Grouper fisheries have high impacts on nontarget species, the Monterey Bay Aquarium reported.
