How To Catch Red Grouper In The Gulf

During the fall and spring seasons in the clear shallows anglers who fish in the Gulf of Mexico realize just how many grouper can be caught. It’s because they hide in the deep surrounding rock formations down in the holes of the porous gulf floors.

When Gulf water temperatures dip in late fall, gag grouper move up onto the flats in good numbers. “They’ll nail a top water plug or a fly (with a 12-weight, minimum), and even jerk baits rigged for trout,” says Captain Gregg.

Captain Gregg says serious grouper -fishing enthusiasts watch their GPS/depth sounders for the right surrounding habitat and structure where they’ll drop live baits using heavy lead sinkers or lead feathers with squid to the bottom and slowly drift in the rock formations. Captain Gregg says, “I guard these spots with my life!” and avoids excessive exploitation.

His anglers release many grouper,which may be undersized in or out of season, but also larger ones for conservation reasons (though he acknowledges that there’s nothing wrong with keeping a few legal fish for dinner). While finding gags in the shallow rock piles and hidden springs that target this coastline isn’t always easy, for those who know where to look, it can be a remarkable way to catch grouper.

Red grouper can be recognized by the slow sloping, straight line of the spun first half of the dorsal fin. Red grouper occur from North Carolina to Brazil, including the Gulf of Mexico and the Caribbean.

Regrouped prefer ledges, crevices, and caverns of rocky limestone reefs as well as live bottom areas in shallow waters. The red grouper is a protogynous hermaphrodite, and females are capable of reproducing at 4 years of age.

Females usually release an average of 1.5 million pelagic eggs that remain at the surface for 30-40 days before settling to the bottom. Red groupers usually prey on crabs, shrimp, lobster, octopus, squid and fish that live close to reefs.

He recently grilled a venomous (but edible) lionfish for a customer who brought in the invasive species, one of many unusual fish he’s cooked in the past.

Customers can bring their fish to Brotulas when the doors open at 11 a.m. and pay to leave it in the kitchen’s cooler until dinnertime. One of Cor doves’ goals for the menu redesign was to make things easier for customers to choose how they want their fish cooked and what sauces and side options they want paired with it.

“Grilled, blackened, or fried are the basic ways to do it, but there are people who like to eat healthy, so we can steam it as well,” One of the new sauces on the menu is a grilled lobster cream comprised of tomato paste, vegetables, and hot sauce cooked in a lobster broth and served over white, flaky fish like grouper.

Note: Another easy prep option is to sear the fish in a sauté pan and add some wine, butter, herbs, and a bit of cream. Time has been called a flowing river, but for Captain Dave Wazowski, it’s more of an ebbing sea.
