I also like that it's easily modified for your own tastes, as evidenced by the number of reviewers who did exactly that. I made it with catfish, doubled the amount of cayenne, used garlic pepper instead of salt, left out the sweet relish, and served the fillets with rice and a salad instead of putting them in buns.
12/19/2009Crisp coating was a nice substitute for fried fish. I also liked the tartar sauce, used olives instead of capers and left out the relish.
I also used Liquid Amino Acids instead of the Worcestershire. I had to increase the cooking time by 10 minutes to get the coating right and sprayed the top of the fish with cooking spray to get more browning.
12/12/2009I always have a hard time with this rating system. These sandwiches aren't “worthy of a special occasion” but are good, and are worth 4 stars out of 5. :) We used cod instead of grouper, and a cream from a fish taco recipe that we also have on the sandwiches.
10/23/2009Good quality fresh fish is best prepared simply, IMHO. This method lets the flavor of the grouper stand out and not the coating.
I usually blend hush puppy mix (the kind with onion) with yellow corn meal which provides an additional layer of taste but still results in a crispy crust that doesn't smother the fish. Great for a busy schedule.
