Flavor/Texture : These oily fish have a reputation for tasting “fishy,” but high-quality anchovies have a meaty texture and a super umami-forward flavor. Flavor/Texture : This mild fish has a slightly sweet flavor and a medium-firm texture that eats juicy when cooked properly.

Some people soak catfish in milk or salt water to remove its somewhat muddy flavor. Substitutes : The best alternative for this one is black cod (also called sable fish), which is often touted as a more sustainable option.

Flavor/Texture : Although cod has a delicate, flaky texture, it’s also resiliently meaty and can hold up to just about any cooking method. A lean fish in the sea bass family, typically found around coral reefs.

It’s prized for its meaty, sweet flavor and boasts an impressively firm texture with big flakes. Substitutes : Any fish with meaty texture works well here, like swordfish, marlin or shark.

Can be used to describe many kinds of saltwater fish, including striped bass, rock cod, redfish and ocean perch. Flavor/Texture : A mild fish with a slightly nutty flavor, a medium texture and a fine flake.

Substitutes : Swap in one of the many fish synonymous with rock fish, or look for red snapper, porgy or cod. Most people marinate shark meat to remove the naturally occurring ammonia flavor.

Flavor/Texture : Although it’s a lean fish, properly cooked snapper is moist with a mild, sweet flavor and a delicate but firm texture. Substitutes : Any whitefish with a delicate flavor will work here, like tile fish, flounder or grouper.

When cooked, this fish flakes easily but sushi-grade tuna can be consumed raw and has a delicate, melt-in-your-mouth quality. Substitutes : Choose a whitefish with a flaky texture, like haddock, rock fish or snapper.

Grouper is similar in flavor to bass and halibut : very mild, but firm enough to cook in a grill pan. Since grouper fillets can be pricier, we highlight this fresh fish by preparing it with simple ingredients like butter beans, jicama, cucumber and collard greens.

Try Jacques Pepin’s recipe, served with black bean sauce and simmered vegetables, or our Asian-inspired version, which features a soy-mustard dressing and a crispy pan-fried fillet. He likes serving the grouper with a quick and punchy citrus sauce and a briny “martini” relish made with olives.

For his take on the sandwich, he tops the crispy fish with a tangy relish and a drippy ranch-style sauce studded with charred jalapeños. A simple salad of julienne cucumbers and carrots tossed with a soy-mustard dressing makes this light fish dish incredibly vibrant.

The grouper represents the coast, while the creamy butter beans, tomato and dill exemplify the seasonal bounty. This dish was inspired by the delicious local grouper Jacques Pepin picks up at the beach when the fishermen return with their catch.

Ready in just over 20 minutes, this healthy, low-carb baked fish recipe is perfect for any night of the week. Whenever I'm out at my local grocery store, I make a point of stopping at the fish counter to chat up my fishmonger friend.

Last time, I happened upon some beautiful looking grouper fillets and my mind immediately went to something quick and fuss-free like a baked fish dinner. This baked grouper recipe gets its bold Mediterranean kick from a few spices and a combination of favorites: fresh garlic, tomatoes, olives, lemon juice, and extra virgin olive oil.

I use the more readily available red grouper, a white fish from the sea bass family. Grouper lends itself to a variety of preparations--I love it grilled, pan seared, or baked.

Textures and thickness may vary, so be sure to adjust the cooking time as needed (fish is ready when its flesh turns opaque and you can easily flake it using a fork; internal temp should register 145 degrees F.) Some good options, as I mentioned earlier: red snapper fillets, cod, halibut, haddock, or sea bass.

Here, we give it a quick coating in some Mediterranean spices including cumin, oregano, and paprika for color and depth. More Mediterranean Flavor Makers: in addition to the spice mixture, we add in fresh minced garlic, fresh lemon juice, and excellent extra virgin olive oil.

This trio is essential to creating the bright and bold Mediterranean flare to this recipe. The olives here contribute a distinctive rich, salty, slightly tangy flavor--a bit of Greek twist.

I love using dill here; it's grassy with a bit of anise-like licorice flavor works well with fish. Pat fish fillets dry and season on both sides with kosher salt.

Prepare the spice mixture of cumin, oregano and paprika in a small bowl, then season the fish well on both sides. Bake for about 12 to 13 minutes or until the fish turns opaque and flakes easily using a fork.

TIP: You've heard me say this earlier, no one likes dry fish so avoid overcooking your grouper. This grouper recipe makes a light and delicious dinner any night of the week.

Make this restaurant-quality Pan Seared Halibut with Lemon Caper Sauce at home for any special occasion. All week long, we’re going to share several recipes that we recently prepared for a dinner party with our good friends Sand and David.

We suggest bringing a cooler full of ice in the back of your car, then place the halibut (or any other kind of seafood) inside that to ensure it stays as cold as possible during the ride home. Once home, keep your seafood super-chilled by placing it in a bowl of ice in the refrigerator until ready to use.

Cook for five minutes then using one or two long fish spatulas, gently flip over being careful not to splash hot fat. Best to pour it all into a bowl, let the burned bits sink to the bottom then skim off a few tablespoons of the fat at the top and place back into the pan.

Serve each portion with a cooked lemon slice and some pan sauce. *If the halibut is not already skinned, place the filet on a cutting board close to the edge where you are working.

Geiger's rationale was based on a new red snapper study (Sedan 24) scheduled for completion in December. Geiger's argument entailed that the council could then make adjustments to the long-term plan based on the findings of Sedan 24.

The long-term plan is not expected to go into effect for at least several months, and will require final approval from the U.S. Secretary of Commerce. Binds states: “The South Atlantic Council deserves credit for taking a significant step toward putting red snapper on the road to recovery.

“We understand this is a difficult time for some fishermen now, but this plan will help secure future fishing opportunities and a healthy ocean ecosystem that benefit tourism and all of our coastal communities. “We'll see if the plan is on target and what adjustments may be needed to sufficiently rebuild this iconic species when a new red snapper study is completed in December.

“Our hope is that red snapper rebound rapidly and that sustainable fishing can resume when the species has made good progress towards full recovery.” Although these closures may affect the bottom line of some fishermen, Congressman Pal lone of New Jersey has introduced He 4914, or the Coastal Jobs Creation Bill, which, if passed, can alleviate some financial sting fishermen and working waterfronts experience as snapper and grouper stocks rebuild.

HB4914 will provide $80 million per annum for the next five years to bolster working waterfronts, coastal debris removal, improved fisheries data and assessment, cooperative research between fishermen and scientists, and funding for coastal restoration and remediation. HB4914 cannot come at better time, with the livelihoods and fishing of the Gulf of Mexico threatened by the BP oil spill.
